  3. Once the wort reaches a rolling boil, add 0.5 oz (14 g) of Pride of Ringwood hops and 10gm Cluster... let it boil for 60 minutes.

  4. With 15 minutes left in the boil, add 0.25 oz (10g) of Cluster hops and 14gm Pride of Ringwood hops.

  5. After 60 minutes, turn off the heat and let the wort cool to room temperature. Then, transfer the wort to a fermenter and add the Australian ale yeast.

  6. Ferment the beer at a temperature between 65-70°F (18-21°C) for 7-10 days, or until fermentation is complete.

  8. or keg and carbonate with pressurised  C02.

This recipe will yield a beer with  a balanced maltiness and bitterness. The classic Australian hops provided will give  a slightly fruity and floral aroma and can be adjusted to suit personal taste.
