Golden Promise Scottish Malt
Golden Promise is a premium Scottish malt prized for its smooth, rich flavour and gentle sweetness.
It delivers delicious biscuity, honeyed and malty notes, making it an excellent base for pale ales, IPAs, Scottish ales, porters and stouts.
For distillers, Golden Promise is a superb choice for malt whisky-style washes, producing a rich cereal character and excellent depth of flavour.

For a 25 L ALL GRAIN SINGLE MALT WHISKEY using Golden Promise, a good starting recipe is:
- 6.5 kg Golden Promise malt
- About 20 L mash water
- Additional water to bring the fermenter volume to 25 L
- Whisky yeast suitable for malt fermentation
- Optional yeast nutrient if your yeast supplier recommends it
Aim for a mash temperature of 64–66°C. Mash for about 60–90 minutes, then separate the wort from the grain and rinse/sparge with hot water until you have enough wort to finish at roughly 25 L in the fermenter.
A starting gravity around 1.060–1.070 is a good target. That should give you a wash of roughly 8–9% ABV if it ferments dry, depending on mash efficiency.
Golden Promise is particularly good for whisky washes because it gives a soft, sweet, biscuity malt character rather than a very neutral grain profile. Ferment according to the yeast manufacturer’s temperature range, usually somewhere around 20–28°C for many whisky yeasts.
For a richer malt whisky style, I’d keep the recipe 100% Golden Promise rather than adding sugar.
