VP41 was isolated in the Abruzzi region of Italy during an extensive European Union collaboration to research natural Oenococcus oeni strains.  VP41 makes a positive contribution to mouthfeel, and importantly, also exhibits excellent tolerance to high alcohol (near 16.5%). Coupled with its dominance capacity and steady fermentation characteristics, VP41 is a reliable MLF culture to use under difficult wine conditions when a significant impact on wine structure is desired. VP41 performs best when temperature is maintained above 16 degrees.

To innoculate, add the suspension directly to the wine towards the end of the alcoholic fermentation, then stir gently to evenly distribute the bacteria and minimize the oxygen pickup.

2.5gm sachet is sufficient for up to 250 litres of wine
