Making your own Australian Tawny is very rewarding using our prepared kits and concentrates.

Each 1 litre of Tawny concentrate is blended from a  selection of Australian red grape varieties and blackcurrants..... all natural quality ingredients, free from artificial flavours or colours, ensuring your results are truly professional. . 

The ingredient kit  includes

  • 1 x 1 litre tawny concentrate 
  • 1 X LALVIN Bourgovin RC 212 wine  yeast
  • 1 x 300gm Rapadura sugar
  • small packet of campden tablets and potassium sorbate

Essentially the grapes (or grape concentrate) is fermented until the wine reaches the desired sugar level, at which point fermentation is stopped and spirit (brandy)  added. By following this age old tradition of adding brandy in the final stages of fermentation (to halt fermentation early) you can make your own Tawny rich in residual grape flavour and more intense in colour. The added brandy will raise the alcohol level to between 15-20% alcohol by volume, which aids in maturing and preserving the tawny as a fortified wine.
