Alcohol Purity and Yield Explained:
The purity and yield of the alcohol will vary depending on factors such as:
- The type of carbohydrates you ferment
- The type of distillers yeast
- how well the wash has cleared using the clearing agents
- control of the water outlet temperature
Purity describes the strength of the alcohol produced by the artisan copper still through distillation. In the development work the artisan still delivered 88 to 89% strength alcohol, using well prepared washes that were cleared.
Yield describes the effectiveness of the alcohol extracted from the wash. the higher the yield the less alcohol is left behind in the boiler. With care and attention to wash clearing and the distillation process using the artisan still, you can expect a recovery of 95% or more of the alcohol fermented in the wash.
Using your Artisan copper conderser as a pot still
If you would like to collect more of the character from your wash like wine for Grappa, molasses wash for Rum, grain mash for whisky or bourbon then you will need to run your artisan's copper condenser as a pot still. To do this remove all the saddles and adjust the water flow to keep the condenser temperature betweem 60C and 65C. The unit can also be used as a partial reflux still by partially filling the column with saddles. You might wish to do this to make a clean spirit buy still retain some of the character of the wash.
Note: The artisan copper condenser is designed to remove all flavour and impurities from a sugar wash. The Still Spirits System works to produce a very clean spirit that we then use as a base with our spirit and liqueur essence range. In the system we control by-product production and removal. If you ar fermenting a different substrate and departing from this system then we cannon advise you the quality and puity of your result.
Please note that in certain countries alcohol distillation may be illegal and you may require a licence. Ask for advice or contact your local Customs & Excise Department.
Please note it is illegal to use these units in Australia to product alcohol for consumption without a licence from the Australian Customs & Excise Department.
