Sake Koji Seed Starter
10gm Sake Koji seed starter. (to make malt rice)
Sufficient starter to make approximately 22 litres of sake when completed (14-19% alc/vol)
Rice that has the correct mould growing on it will act like malt and convert additional rice starch to sugar. This is referred to as malt rice and the correct terminology is Kome-Koji
This starter packet contains Koji seeds which are dry and extremely stable. They have an indefinite shelf life being dried conidia. They need no refrigeration and the packet can be opened and closed frequently without harm.
Sake can be made with most accessible kitchen equipment or home brewing/winemaking equipment.
