This Grainmaster Ingredient kit includes all Australian grown malts with the exception of the Carapils)
- 4.3kg of Pale malt
- 100gm of light Crystal malt (20L)
- 0.230 gm of Vienna malt
- 0.230 gm of Carapils malt
- 1 oz (28 g) of Pride of Ringwood hops
- 0.5 oz (20 g) of Cluster
- 1 package of ale yeast
- 5 gallons (19 L) of water

Instructions:

Heat 3.5 gallons (13 L) of water in a large pot to 160°F (71°C). Turn off the heat and add the crushed grains. Stir well to ensure all grains are wet and there are no clumps.

Let the grains steep for 45 minutes, stirring occasionally. Then, remove the grains with a strainer and let the liquid (wort) come to a boil.

Once the wort reaches a rolling boil, add 0.5 oz (14 g) of Pride of Ringwood hops and 10gm Cluster... let it boil for 60 minutes.

With 15 minutes left in the boil, add 0.25 oz (10g) of Cluster hops and 14gm Pride of Ringwood hops.

After 60 minutes, turn off the heat and let the wort cool to room temperature. Then, transfer the wort to a fermenter and add the Australian ale yeast.

Ferment the beer at a temperature between 65-70°F (18-21°C) for 7-10 days, or until fermentation is complete.

After fermentation is complete. and the beer has cleared and settled, bottle with carbonation sugar in each bottle allowing minimum of 3 weeks to naturally carbonate,

or keg and carbonate with pressurised C02.
This recipe will yield a beer with a balanced maltiness and bitterness. The classic Australian hops provided will give a slightly fruity and floral aroma and can be adjusted to suit personal taste.
