Organic Rapadura sugar, also known as panela sugar,  is a unique sugar produced with unrefined sugar cane juice.  The juice is evaporated until natural sugars form a hard sugary cake.  Its taste is complex and delicious with unique caramel undertones. It retains natural vitamins and minerals because unlike refined sugars it is not separated from the nutrient dense molasses in the sugar cane during the drying process.

 In beer making it contributes a wonderful complexity for dark beers and a background foundation for light ales or lagers.  Hints of caramel and authentic molasses are but a couple of characters attributed to rapadura.

Used as a fermentable in rum making it.
