Sparging, also called lautering is a step at the end of the mashing process where hot water is run through the grain bed to extract a sweet malt liquid called wort. The wort is later boiled with the addition of hops. When the boil is finished the hot wort should be cooled as quickly as possible, often through a heat exchanger, so the yeast can be introduced for the fermentation stage.
