Wort chillers are used to cool boiling beer wort from the kettle to the fermenter so that the yeast can be safely added at the right temperature without delay.  This avoids the possibility of contamination from airborne bacteria or yeast, so the quicker a brewer can bring down the temperature and pitch the yeast the better.

Wort chillers come in several designs, including plate style chillers and immersion coils.
