Our instructions will guide you through the fermentation process and by following the age old Portuguese tradition of adding Brandy in the final stages to arrest fermentation, you will make a Port that is rich in residual grape sweetness and intense in flavour. The potential alcohol content is approximately 18 percent. The Quality German pure strain winemaking yeast supplied is chosen to enhance the colour, flavour and character of this Port. This German strain of yeast is particularly favoured by commercial wineries for its ability to prevent fading during fermentation so that none of the brilliance of the grape colour is lost. |
