Refractometers can be used to measure solution concentration and are applied throughout the food, agricultural, chemical and manufacturing industries.

The most common application is the determination of dissolved sugar solids in food products such as soft drinks, fruit juices, concentrates , and ripeness of fruit, particularly grapes and fruit for winemaking. Also for measuring of wort for brewing and alcohol in spirits.

Hand held refractometers are used for rapid 'on the spot' determination of solution concentration. Hand held models offer the user a low cost, reliable optical measuring instrument which is very easy to use.

pH METERS

 

The biological and chemical stability of wine is very dependent on its pH value. A wines pH depends on several factors, the total amount of acid present, the ratio of malic acid to tartaric acid and the amount of potassium present. Wines that contain little acid and excess potassium show high pH values. Wines with more tartaric acid less malic acid, less potassium and more titratable acid has lower pH values.

pH values range from 2.9 to 4.2 in wine. Lower pH values are known to improve the stability, so winemakers usually prefer a pH range of between 3.0 to 3.5. The wine is so stable in this range that it is believed pH is the most crucial guideline in winemaking. Low wine pH results in better visual qualities as well as helping to maintain better color intensity, with red wines having more colour retention and white wines not browning (oxidising) as easily.

When wine has high pH values, bacteria grows more rapidly, resulting in problematic fermentations and high colour loss.
