the process to make
this Cider is simply to dissolve the apple concentrate in water taken
off the boil, add cool water to the desired level and pitch the German
Champagne yeast at between 20-26C. Ferment until all fermentation is
complete and bottle into either Champagne or beer bottles. |

apple concentrate with Champagne yeast is $21.00. If you want to try the smaller 12 litre ferment first, choose a fermenter to match the size of the fermentation ie. 15 litre glass demijohn or 15 litre polyethelene fermenter..no larger than this. This is to avoid a large air space. Otherwise use your standard brewing fermenter and use 2 x 2 litre concentrates.

Summer Champagne Punch Recipe using Cider
Punch recipes are always a good stand by for summer entertaining. They often make a welcome substitue to stronger drinks and can be mixed with more or less alcohol to suit. This recipe originally called for 2 bottles of champagne however substituting DrinkARTSparkling Cider is an excellent cost saving alternative and the results are equally as good. |
INSTRUCTIONS In a medium size saucepan combine sugar and water. Bring to the boil over a moderate heat and simmer gently for 4 to 5 minutes until sugar has dissolved and the syrup has thickened. Remove from heat, Transfer to a large bowl and add pineapple juice. Just before serving add all remaining ingredients |
